How did we Start?

The owner got the idea to serve healthy yet delicious foods after developing an autoimmune disease. When she was no longer able to enjoy all the goodness in food _no dairy, no sugar, no soy, and no gluten_life appeared to be much duller, without happier eating.

But this provided her a chance to see things from a different perspective. She tried recipes without sugar, dairy, soy, and no gluten, yet these were not tasteless. Now, her goal is to create food that anybody would feel comfortable eating. Healthy and palatable food that makes your body and tastebuds, happy.

Homemade Fig Newtons:

On top of today’s list is fig newtons. What makes ours unique are the figs, which are harvested directly from the tree, used in this recipe. Also, our recipe is gluten free and dairy free, all organic, fresh, and yummy.

Well, you can learn about the complete recipe on our page, but we are going to give you some highlights here.

First of all, our farm fresh figs are heated in a pan, brought to a boil, and left to simmer for a while. Then they are mixed in a food processor to make a smooth paste. This paste can be refrigerated for a few days to be used later.

Then we add gluten-free flour along with baking powder and salt.

In another bowl, sugar and butter are mixed until creamy, then eggs are added with vanilla powder.

Then comes the tricky step: in a 9- by 9-inch square pan, put parchment paper on it, butter it, and pour half of the batter into the pan. Then place another piece of buttered parchment paper on the batter, pressing it down to make a square. Then freeze this parchment sandwich for 20 minutes. The top layer of your Newton is then ready.

Butter another square pan and spread the rest of the batter to make the other half of the Newton, then bake it in a preheated oven for 20 minutes.

Topple it with the refrigerated fig jam you made early.

Then take out the top part from the freezer, peel off the parchment paper, and place it on top of the jam.

Bake the whole sandwich again for 20 minutes or a little longer in the oven until it is golden brown.

Then cool it a bit, and here you go, your homemade fig Newton is ready to be enjoyed.
